St Patrick’s Day Pudding Cups are made with chocolate instant pudding, mint OREO cookies, sprinkles and whipped cream topped with a edible gold sprayed OREO coin.

I wanted to create a fun and really easy dessert for the holiday. My kids always go crazy for pudding so I made these basic pudding cups with a couple little features to make them extra special. The lucky gold coin really completes this dessert creating something festive and a bit original.

St Patrick’s Day Pudding Cups

St Patrick’s Day Pudding Cups have layers of creamy chocolate pudding, layers of cool whipped cream with crunchy, minty pieces of OREO cookies throughout. An easy dessert to whip up that both children and adults will enjoy!

What You Need

  • Mint OREO Thins
  • Edible Gold Mist
  • Sprinkles
  • Instant chocolate Pudding
  • Milk
  • Heavy Cream
  • Confectioners Sugar
  • Vanilla Extract
  • Green Food Coloring
  • Small Jars (4)
  • Pastry Bags
  • Parchment Paper
  • Hand Mixer
  • Bowls

Instructions

  1. Place a bowl and beaters of hand mixer into freezer for 20 minutes.
  2. Remove from freezer, assemble hand mixer.
  3. Make the whipped topping: Pour 1 cup heavy cream into cold bowl along with confectioners sugar and vanilla extract. Beat to a stiff peak meaning that when the beaters are lifted out of the bowl, the whipped topping holds shape and does not flop over.
  4. Place a quarter of the whipped topping in a separate bowl for the final topping on pudding cups. Place to the side.
  5. Add some green food coloring into remaining whipped topping and stir until fully incorporated. Place to side until everything else is prepped.
  6. Spray four OREO cookies with the gold mist : Set your OREO cookies on parchment paper, spray the cookies, let dry, flip and repeat. Set to the side.
  7. Chop ten OREO cookies. Set to the side.
  8. Mix your instant pudding with milk according to box instructions.
  9. Layer your pudding cups. Start with a layer of pudding, add a layer of green whipped topping, add a few sprinkles and chopped OREO cookies and repeat one more time.
  10. Add a dollop of whipped topping that was not colored green and sprinkle any remaining cookie crumbs over top.
  11. Garnish each with a lucky gold cookie coin.
  12. Place into fridge until set up and chilled.

Tips

A trick for Pinterest perfect pudding cups is to place the pudding and the green whipped cream into pastry bags so you have more control over the layers!

  • 14 OREO Thins (mint flavored)
  • Gold color edible mist for cakes
  • festive sprinkles
  • 3.9 ounce box instant chocolate pudding
  • 2 cups milk

Whipped Topping

  • 1 cup heavy whipping cream
  • 2 Tablespoons confectioners sugar
  • 1/2 teaspoon vanilla extract
  • green food coloring

Instructions

  1. Spray 4 OREO cookies with the gold mist. Set your OREO cookies on parchment paper, spray the cookies, let dry, flip and repeat. Set to the side.
  2. Chop 10 OREO cookies. Set to the side.
  3. Mix your instant pudding with milk according to box directions. You will want to mix the pudding after the whipped topping is complete.
  4. Layer your pudding cups. Start with a layer of pudding, add a layer of green whipped topping, add a few sprinkles and chopped OREO cookies and repeat one more time.

    My daughter (who’s home from college because of the pandemic) and had such fun making these! I was confused, though, because the recipe called for a 3.9 oz package of pudding mix, and our packages were 1.4 oz. So I used 3 packages, which called for 2 cups of milk each = 6 cups of milk! Yet your recipe calls for only 2 cups of milk, total. I compromised on 4 cups of milk, and we ended up with a LOT of lumpy pudding. I’m sure they will taste good, anyway. But please clarify?

      I just double checked a box in my pantry site in case I made an error on a measurement. There is a 3.9 ounce pudding instant pudding box that calls for 2 cups milk. I looked up the 1.4 ounce package instructions online (may not be right) and those instructions also say 2 cups so must be a slightly different formula used in the different boxes.
