The cuisine of the northern portion of the sea is often said to be based around three core elements: olive oil, bread and wine.

Whatever the shore, the region’s food, influenced by it’s warm climate and proximity to the sea, also feature an abundance of fresh vegetables and a delectable assortment of seafood.

The Mediterranean Diet

The concept of the Mediterranean diet arose in the 1960’s and was based on the perceived health benefits of the diets of Greece, Italy and Spain. It emphasizes fruits and veggies, olive oil, unrefined grains, legumes and fish, with other things in moderation.

For clarity, these recipes are based on the cuisine of the entire Mediterranean region, rather than the diet. That being said, many of them share the same principles of the diet.

Yield: 1 cup

Total Time: 5 minutes

This collection of great Mediterranean recipes includes delicious dishes from breakfast to dessert and everything in between. For an easy start, try this great pesto sauce.

Ingredients

  • 2 cups basil
  • 2 garlic cloves
  • 1/3 cup pine nuts
  • 1/4 cup Parmigiano cheese (or other hard cheese)
  • 1/2 cup extra virgin olive oil
  • 1/2 tsp coarse salt
  • 1 Tbsp lemon juice

Instructions

  1. Rinse basil and remove leaves from stem. Peel garlic.
  2. Add basil leaves, garlic cloves, cheese, salt and pine nuts to blender or food processor. Pulse a few times until ingredients are blended into a coarse mixture.
  3. Drizzle in olive oil and pulse blender until all ingredients are well mixed. If needed, scrape sides of blender to ensure everything is evenly mixed.
  4. Add lemon juice and again pulse.
  5. Taste and adjust salt, garlic and cheese to your taste.
