Why This Recipe Works

My husband. He’s funny. There are really specific things he becomes obsessed with. Our spice cupboard is always perfectly arranged. The living room has to be rearranged every so often. And we always arrive at Thanksgiving dinner with multiple varieties of corn.

For the past few years “multiple” has meant four. Yes, friends, we frequently bring FOUR types of corn to our Thanksgiving feast and this Crock Pot Creamed Corn variety is hands down my favorite of them all.

To be clear, this isn’t mushy creamed corn. You know the corn in a can that appears mushy and a little goopy? This recipe isn’t that. So if you are concerned, remove that goopy image from your mind.

I love my Instant Pot and you can definitely make amazing cream corn in it. But my first love is my slow cooker and the amazing recipes you can make slowly. You’ll be pleased to know that you will literally put five minutes of effort into this version of Creamy Corn.

It is a total breeze, requiring basically no effort on your end and it is super creamy and yummy. Its method of cooking also opens up valuable oven space for other holiday dishes and you most likely already have all ingredients on hand.

Can I make this the day before and heat it up the next day?

Ginger, great question. You definitely can! If you have a lot of sauce with it, it’ll heat up in the sauce. If it’s drier and mainly the corn, add a little milk or cream to use to warm it up. Thanks!

Hi Ellyn! I would say doubling the recipe would feed 18 people. It is SO GOOD, so tripling wouldn’t be a bad thing, either. It WILL get gobbled up!
